So, it appears my work-around will work well. I set it up as suggested above, and it worked fine. I created the certificate and future class registration 'how to' in the user email section of the gift certificate "event" message section, and duplicated it in the Admin email section so I can print a copy for my records. For the event date, I just made the "event" all day on January 1, 2030, and put a notice in the event form message reminding them the actual event date will depend upon the gift receipant's class of choice.OK David. Please try your solution and get back to us with the result
Thanks !

This does seem like a great solution David, but for me I'd like to allow any value amount to be specified by the customer.
So a customer goes to the site, purchases a voucher for $23 (for example) then this gets created as a voucher code, which is then emailed to the customer which they can print off.
Any ideas how this can be done?

Hello Rusty
The other solution is using Payment Form with EB Voucher plugin in that extension. It works better. But we also do not have an option to allow printing that voucher

Thank you for coming back to me so quickly.
We don't necessarily need to print the voucher.
But would need something generated to show the voucher details, is that possible as part of this? Or could we even generate something from the details added to the Payment Form?

Not sure what voucher details you want to show. If you just want to show the voucher code and the voucher amount, then it is possible using Payment Form

We would want to show the voucher code, amount and a greeting message. Hopefully this is possible using Payment Form? Can we then set it to use the Print function from the browser?

Yes. That should be possible. You can setup the message (both thank you message and email message) to include the message and the details you want
Give it a try.
Regards,
Tuan
