Is there a way to always insert a pdf icon when you insert a file into an article? Also, a way to edit the link text for the file?

=> At the moment, it is not possible. I think you will need to edit the editor-xtd plugin to add some css class to the link and then add some css code to show PDF icon.
For the link text for the file, the extension use title of the document for the text . How do you want to change it so that I can guide you ?

In this case, you will need to create these links manually (using the insert links button in the HTML editor you are using). The link to an EDocman document has the following format :
index.php?option=com_edocman&view=document&id=ID_OF_DOCUMENT
