Thank you for explain about the customer requirements.
1. The feature when click on the product to show short description in the popout: My quote to do it is $30. If you agree, please submit a new ticket to EShop category to send me the super admin account to your site so I can help you to implement that.
2. Regarding the payment, I think you can use the default Offline Payment plugin in EShop. Please read more about it in the documentation here:

3. EShop is compatible with all Joomla 3.x version and of course, it is compatible with latest Joomla version.
