eShop: Multiple Shops in one Joomla instance?

Hi,
looking at eShop, requirement is each region of the organisation has different products for sale and needs a different Stripe gateway.

ie. if Ordering from the New South Wales region shop it needs to use the NSW Stripe gateway and notify the NSW Admin.

Is this possible?

It is possible to have different category of products sell through different gateway?
