how do i change the employee list from tabs to drop down list, is this a hard code modification? ( if you have more than five employees it looks jumbled) see screen shot attached.

Unfortunately, OS Services Booking doesn't have feature to change the Employee's tabs to dropdown select list. But you can use the filter parameters of layout: Default layout. To reduce the number employees to be shown in the booking form.
