E-Shop: store mode

Is it possible if the E-Shop is set in store mode (add to cart, check out e.g.) to exclude some products from checkout?

Hello,
EShop has a feature to disable add to cart and checkout mode for any products that you want. You just need enable "Call for Price" in a product, then client can not see product's price and add to cart for that product.
With other products which have "Call for Price" is disabled, customers can still add them to the cart and checkout.

If I look in your demo store, I only can find the option (system > configuration > tab option > catalog mode) but that option disables the checkout option for all products, that's not what I want. How can I enable 'call for price' in a product?

If you look at our demo for back-end of eshop at eshopbackend.joomdonation.org (demo/demo), if you click on a product to edit it, under Data tab, you will see "Call for Pricce" option. Just need to choose Yes to enable it. It will work as you expect.

Yes, I setup a product on my demo site with "Call for Price" is set. Please go to eshop.joomdonation.org/cameras/digital-cameras.html , then look at "Canon EOS Rebel T4i" product, you will see. Click on the product link to go to product detail, you will also see how it works.
