Hi - this may be very basic but ....
Given a rather restrictive mail out by my host provider - say 30 emails per hour for the purpose of the query, then to send out 500 emails I MUST (?) set up a Cron job?
Or, is this done automatically if I can tell MailerPro these limits?
and, in the above case, do I have to remain logged onto the backend as a Joomla admin until all emails as sent? (My Joomla session may be limited to say 20mins since the last activity).

No need for setting up cron jobs. You just need to "tell" how many emails you want it to send each time and it will only send that number of emails each time until all emails are sent.
You don't need to stay logged in. The extension uses Joomla System plugin to handle sending emails. So each time there is someone access to your site (not only you but any visitors of your site), it will check and process sending emails if needed.
