Variable payments - which extension should I buy?

My client needs to be able to accept payments of variable amounts. That is, he needs the customer to be able to enter a payment amount. These are not "donations" as they're actually payment for services rendered, but there will be no set amount the person will pay.

Should I purchase Joom Donation, or would Payment Form work better?

If I purchase Joom Donation, can I remove any reference to the word "Donation"? If I purchase Payment Form, does it support variable payments?
