Sort by Category

Is there a way that instead of just by date, a person can also sort by category. For instance, my client runs a paddleboard company with various options. Some poeple may want to join a Sunset Paddle. They may not have a specific day in mind. They just want to find when it's available.

How would I set something like that up?

Unfortunately, currently in OS Services Booking, customers must select date first, and system will show the available time slots that customers can make the booking request.
