Missing Subscription Emails

I don't seem to be getting any notification emails despite having configuration set up to request them.
I've tested my Joomla mail sending and that's working... I've only just noticed Membership Pro's email logging feature - so I've activated that to hopefully help troubleshoot. My question is, with that logging feature having been switched off, is there anywhere I can look in Joomla, Database, Mail Server perhaps to see the previous mails that should have been sent out?

Hello
You can set Log Emails config option to Yes, then make a new subscription, and check Email Logs:
1. If you see emails logged, that mean Membership Pro works well. In that case, you need to contact your hosting provider, ask them to check to see why their mail server could not deliver email to that target email address
2. If there is no emails logged, that mean there is problem with Membership Pro and we will guide you to check it further

Thanks for the reply here. On testing, things look to be working ok for pay offline and Stripe completed payments.
What I now think got this issue raised was if a person completes a subscription form, selects the Stripe payment option and then doesn't complete payment - they still get a Joomla account created (albeit not activated) - so my colleagues were thinking these were new people signing up to membership schemes which we had missed.. Is there a 'failed payment' email option anywhere to help confirm to us admin's that this has happened?

Unfortunately, there is no failed payment email like that available. And actually, it is not possible to have something like that for payment method such as PayPal and Stripe. The reason is because when users are being redirected to payment gateway, if they close browser and don't make payment, there is no way for us to know about it
For your case, maybe go to Membership Pro -> Configuration, set Only Create User Account When Membership Active/Approved config option to Yes
When you do that, user account will only be created for successful payment only and that would address the confusing you are having
