how do I stop subscription expiry e-mail messages from being sent to people?
(and where is the date on which they are sent set)

You want to disable reminder emails sent to subscribers when their subscriptions are being expired? If so, go to Extensions -> Plugins, find and disable the plugin Membership Pro Reminder
