Talking to the right person then! 
After clicking Yes, the submit button sends the user to com_user view profile. It would be better to be able to direct the user to com_osmembership view profile. I don't know how to make this happen. If we use MP for profiles, the user should never get to a com_user profile.

Sadly, there is no way to modify the redirect URL by overriding the layout, so the right solution would be writing a plugin to handle this redirect.
This is not a quick and easy task (sorry) because when someone (who has not had any subscription in Membership Pro) access to Membership Pro user profile page, Membership Pro also redirect users to Joomla core profile page, too
I'm busy at the moment and could not write the plugin. But I will see if I have time to work on it in the coming day

Please remember that GDPR gives individuals the 'right to object' to the processing of their personal data in certain circumstances.
It follows that a scheme that 'requires' 100% agreement to the Privacy policy is not legal.
There is also a problem with legacy members. It easy for new members, but are you going to delete all the old ones just becasue the membership demands 100% argeement? I don't think so.
I suggest that the right way to address GDPR is to use custom fields to record what you need and with the compliance that you can control
