How do I set up the tax rules in Europe so that I have always 100 € as the final sales price no matter what the tax is?

Hi

Unfortunately, we don't support that option. You setup price, then the system will calculate final price base on that price and calculated tax rate

We don't have a way to have final price not depends on tax rate
