I have copied my website to a test server & installed MembershipPro there for testing.
Can I STOP any emails being sent to members (Reminders, Subscription expired etc.) while I am testing?
Also, what triggers these emails ? I the site is not visited for several days (or weeks) will the reminder emails still be triggered on-time? Or do I need to set up a CRON job to trigger them ?

For that test site, better go to System -> Global Configuration, look at Server tab, Mail Settings section, set Send Mail parameter to No to disable email of your whole site
For sending reminder emails, if there are no one access to your site, there would be no email sent. So if you want to be safe, Yes, setup a cron job to make a request to homepage of your site to trigger the process. See stackoverflow.com/questions/11375260/cro...ress-every-5-minutes for a sample, contact your hosting provider and ask for their help if needed
However, I don't think it is needed. Even if there is no real visitors, I would say that there would be search engine bots access to your site during the time
