I have a plan which has a custom field for a date, is there anyway to add that date that the user enters to the reminder emails that go out?

Unfortunately, it's not possible. In reminder email, we only support some basic tags as explained here membershipprodoc.joomservices.com/basic-setup/setup-reminder
