Hi, we're testing the renewal reminder emails on a test copy of the site with limited subscribers. So far, we are not consistently seeing the emails come through. Is there is some activity on the site that is required to trigger these emails? Do we need to set-up a cron job to prod the system to send out the reminder emails?

Membership Pro uses a system plugin to send reminder emails, so Yes, there must be some activities on your site to have reminder emails triggered
Maybe this errors happens because your site is still testing at the moment. When it goes live, there should be at least some activities on the site (can be from real visitor or by search bot...)
If you want to be sure, yes, you can setup a cron job. Just make sure there is one request makes to your site and it will work OK

You can ask your hosting provider to help with the setup if needed. I just googled and found this

Would the cronjob need to hit a page that loads some aspect of Membership Pro, or will any page on the site do?

It can just be homepage of your site (or any pages on your site you want). It is a system plugin, so it will be triggered every page load on your site
