Add/Edit description on Plans List Default Layout

How do I add or edit a description at the beginning of the list of plans as shown in your demo?
Do I have to create a category for all my plans and then create a category description?

If you mean you want some introductory text before you list the plans, you can create an article, add whatever text you need then add a shortcode to list the plans, such as:

I'm sure there are other options for this shortcode, but this will display all plans, or you can select the plan by their ID. I think the documentation covers this is more detail.

Yes. You will need to create a category, assign plans into the category and then in the menu parameter, choosing the category

By doing that, description of the plan will be displayed before the plans list
