There doesn't seem to be a way to disable support for recurring payments with paypal pro plugin. Is there a way to disable this? I'm concerned changing our pp IPN will break other components.

If you don't need recurring payments then would the stand PayPal plugin meet your needs?

Correct. Recurring is only enabled if you enable that in your subscription plan
