Is the integration bi-directional? Meaning if someone uses the MailChimp form to update their email address will it be brought back to the Joomla account/Subscriber record?
You are correct. The integration is just one way only. Infact, the extension just add the user email to mailchimp at the time subscribers sign up, it won't change email if later, users update their email to use new email

Will they still have their email address listed in mailchimp - or will this be automatically removed/deactivated?
