I have installed the last Joomdonation version and I want to change the language to Spanish. I have been searching for the es-ES translation and I have not found where to download it.

Unfortunately, Joom Donation doesn't have Spanish language, but it has Translation tool at Backend of component. You can use that tool to translate static content of Joom Donation from English to Spanish easily

I have already been using translation tool for the basic content that I needed. I was looking for the language pack so I didn't have to translate all content.
