Unpublish Campaign when Goal is Met

Is there a way to unpublish a campaign (thereby removing it from donation campaigns module, etc...) when the established goal is met?

Unfortunately, this cannot be done automatically at the moment (you can write a Joom Donation plugin to do that but I think you don't know coding). So in this case, you will have to unpublish these campaigns manually.
