Yes, EShop support Catalog mode. You simply go to EShop -> System -> Configuration -> Option tab to enable it.

In catalog mode, have options to input in Inquiry form with custom fields, which is custom fields are different for each one product category?

For example:

=========================================================================================
Product category ( Aluminium Profiles ) in Inquiry form for each one product to add blank custom text field "length" and when customer open product from this category to fill desired length.
=========================================================================================
Product category ( Doors interior ) in Inquiry form for each one product to add blank custom text field "width" and when customer open product from this category to fill desired width.
We plane to buy your product i it have this options

You can have that function by using Product Options feature. So in each product, you can ask customer to make some selections (Via Select list, Checkbox list or Radio list) or enter some text (via Textbox or Textarea fields), choose Date, Upload files, etc. for that product before adding it into the cart. All of these feature is enable in Catalog mode with Quote cart enabled.
