I set the default Italian language but I still see the site in English, what procedure should I do?

Is your whole website in English? Or just Events Booking is displayed in English language?

Then it's a problem with your site and not related to our extension. Try to follow the instructions at
www.joomlashack.com/blog/joomla/switch-language/
and change your site default language to the language you want, then check to see if it works
