How can I select specific categories in the “Full Calendar” menu type? Currently, it either selects all categories or just one.

That's not right. In the menu item parameters, you can also see Categories, Exclude Categories which allow you to display events from selected categories (or from all categories except the selected)

Thanks for the quick reply. I didn't notice that the option “Choose the category in which you want to display events” appears twice.

Yes, these parameters can be seen on Options tab of the menu item
