Is there a way to include a custom filed which will enable the customer to enter a number to be added to the total of the ticket for a donation?

Yes. It is possible. You can use a text custom fee field, see docs.joomdonation.com/eventsbooking/basi...ox-custom-field-type

But is it possible to have a field where the customer enters own amount, not pre-given with a set value. Just an empty field which will accept any number entered by the customer

Yes. The field is empty by default. You can try to read the documentation I sent and try to setup it. If you have questions or need help, please don't hesitate to ask
