Is there a way I can edit the invoice template that the system sends when the customer chooses offline payment?

Are you saying about PDF invoice sent by the system? If so, we only have a single invoice layout which is used for both online and offline payment which can be changed in Invoice Format (or Invoice Format Shopping Cart) config option in Events Booking
