How does it work to include a field in a registration where you can enter a coupon code and if it's valid a discount will be applied?

Hello

You can use build-in coupons feature in the extension. See eventbookingdoc.joomservices.com/basic-setup/coupons

Note that after creating coupons, you need to go to Events Booking -> Configuration, set Enable Coupon config option to Yes to enable coupon on Events Booking
