"Payment information" fields remain empty

Hello,
unfortunately the amounts in the "Payment information" fields are not calculated (regardless of which payment plug-in is used).

Can you please tell me,
- where I can specify that these fields are not displayed at all
or
- what information I need to enter where so that the fields are calculated properly.
