How to disable registration fields?

For new users who register for an event, it is asking for a number of fields that are not required when registering as a normal Joomla user. It looks like it's trying to fill in ALL the "contact" fields from a Joomla contact, which is different than a Joomla user. It is different than a Joomla contact in a number of ways too.

We don't want most of these fields to be required (red star).

I couldn't find any documentation on how to change this. Is it possible to change it so that we can define which fields are required?

Yes. You can go to Events Booking -> Custom Fields, unpublish the fields you don't want to collect

If you just want to show the field but make it optional, edit that field and set Required to No
