Hi,
How do I edit/ override the layout on the 'submit event' page so that any changes I make won't be overwritten by future event booking updates?

Hello

Use override. Move the modified file to PATH_TO_TEMPLATE/html/com_eventbooking/event folder and it won't be lost when you update to future releases
