In [ EventBooking -> Configuration -> General tab ], look under the General Settings category for the option to "Show events until event end date".

For an old version of EB, I'd look for "hide_past_events" in the following files (list based on the latest versions, searching for "show_until_end_date" in order to see where that config option is used):

If those files don't control the view(s) you need to tweak, here's what I found for the occurrences of "hide_past_events" in the EB front-end files:
