Sorry I don't have the answer, but while on the subject of text terms, as my customers are all UK based, is it possible to ask for 'Postcode' and 'County' instead of 'ZIP' and 'State'?
Also when listing the event numbers for each category in brackets next to the category title, I would rather it said 'Courses' or 'Classes' - is it possible to edit this myself? I tried turning 'Show number of events' off but it still showed. I also want to remove the title 'Event Categories'. Can I remove this? If so, please provide some instructions.
Many thanks,
Tes

@Tes and @John
You can change any language string from back-end of the extension. Just login to back-end of your site, access to Event Booking -> Translation, find the language string and change to what you want .
Thanks,
Tuan

I found Tuan's answer on a different thread:
You must back up up my language/en-GB/ en-GB.com_eventbooking.ini file to save your translations
