I want to change the register button name from 'Register' to 'Buy Tickets'.
Where / how would I do this?

Fortunately, changing this text has been made quite easy (thank you, Dev team!)
Just go to [EventBooking -> Translation]. Type "register" into the filter box and press the Go button. Now, look for key "EB_REGISTER_INDIVIDUAL" and enter your new text into its translation field.
