Hi,
On Dashboard - Statistics and Event Manager - # Registrants it's the number of people who already have paid. Is there a way to see the number of registrants with 'pending' payment ? (eg. 90/100 as paid/total or 90/10 as paid/pending)

There is not a built-in way of getting that total. If you have [Configutation -> General tab -> Registration Settings -> Show incomplete payment records ] set to [YES], then you can see the unpaid (aka status -> unpublished) records.
You would have to write some custom code (a bit of PHP and likely a mySQL query) to give you a total of unpaid. Shouldn't be hard to do, depending on your level of coding experience.
