You configured it in a wrong way. Please don't set Assign Custom Fields to category' instead of ' to events config option back to No
Then you will need to enter ID of organization field into Custom Field Ids to the event to get it displayed. Unfortunately, I forgot to implement a global settings for it. So it won't be a global settings for now. Please wait me until this time on tomorrow, I will update the download package which allows you to make a global settings for custom fields

Just had it implemented. Download latest version, upgrade it to your site, then go to Events Booking -> Configuration, you will see a config option called "Registrant List custom fields Ids". Enter IDs of the custom fields you want to show on registrants list here (and remove the custom field ids you entered for the event) and it will work as expected.
The idea is that:
1. If you enter custom field ids for the event, that custom field ids will be used
2. Otherwise, custom field ids in Configuration will be used
