This is only an example, but how to add items that might be optional for one event?

Here's how I do it. It's not hard, but takes a little bit to list all the steps (just in case you've never created a custom fields before)
- Add new [custom field] -- checkbox or radio button
- Select the [event] (or events) that the field will apply to (hold ctrl as you click to select multiple events)
- Set the [name] (eg. graduation_Meals), [title] (eg. Meals); set [values] (as follows)
-> if checkbox:
Lunch ($10) <make sure each item is on a new line>
Supper ($20)
->if radio:
No meals <make sure each item is on a new line>
Lunch ($10)
*** edit ***
NOTE: If using RADIOs, also enter into [Default Values] whatever line you want to be the default selection; in this example, enter "No Meals" without the quotes
***********
- set [Fee Field] to [Yes]
- enter the [fees values[ that correspond to each [values] that you've listed (one per line)
*** edit ***
-> for example, if checkbox:
10
20
************
-> for example, if radio:
0
10
- make sure you set [published] to YES as well
- Save & Close
Back at the [Fields Manager] screen, click on the [Order] column heading to sort by order. Move the new field ALL THE WAY to the top using the up arrow button... or you can enter new numbers for all the fields & click the little up/down-arrow button beside the column heading to save the new numbers (but I keep having problems with this as it doesn't seem to like duplicate numbers, and I have to renumber ALL the existing fields in order to allow for my new field to take spot #1).

That's weird...
Try to rebuild the custom field with only values set (keep required = off, fee = off and nothing in the fee values box), then add the options back one-by-one to see if you can find specifically what is causing the error.
If you are getting errors even on the most simple checkbox field, you might need Team Tuan to take a look at your website backend?
