show other fields in registrants view

1). I would like to show the organization when looking at the registrants display. Can the header categories be modified in this view?
We need to always be able to see the company (organization) that a student belongs to and to be able to sort this way by clicking on the column topic in the registrants section like you can with first name etc.
2). Can the names of default fields be changed? For one, I would like to change "organization" to "company". I notice they are grayed out in the fields tab.
3). How do I get the form activated/published in my Joomla site? It would help if I could make changes and try it on the front end on my web site.

=> You cannot change name of the custom field. However, you can change it's title from Organization to Company. It will work

=> You can create menu item to link to categories view of Events Booking. Then when users access to that menu item, they will see list of categories, click on category to see event , then click on Register button to see Registration form...
Try that and you will see

In case the attachment does not open I'll describe better what page I'm looking at in my 1). question. When you go to the dashboard of Event Booking there are 16 icons in a 4x4 square. This is the top right one named "Registrants". When it opens up it lists the registrants by: First Name, Last Name, Event, Event Date, Email, #Registrants, Registration Date, Amount, Registration Status and ID. This is where I would like to see the Company/Organization listed and maybe other changes. You can click on any of the previously listed fields and it will sort accordingly.
I'm working with the other answers you gave so hopefully that should take care of those questions.

For this need, you will need to edit the code. Open the file administrator/components/com_eventbooking/view/registants/tmpl/default.php
You should see the code and can add the extra column you want
