So we have an events site based in the UAE - We would like to have the currency in AED on the site only but dont mind if the system changes it to USD once it gets to the gateway which is paypal in this case. Is this possible ?

The price displayed on your site is in UAE or in USD ? If you just want to change the currency symbol from USD to UAE, then it is possible. However, if you want to display the price in UAE and when users redirected to Paypal, that price will be converted automatically to USD, then it is not possible
