Coding csv file and custom field question

1. When I export registrator data to csv I does not have a Polish characters such ąęćź. Only some "bushes". How to repaired this issues? This wine character encoding, but where? In the database?
Once more. How delete one or two position from export do csv?
2. The second more difficult. Is it possible to set custom fields so that they write their account? I had always the same customers and a lot of additional fields. Each record of the exam the data the user needs to fill. How to save this data on user account? Connect it to your Joomla, K2 and maybe your add MEMBERSHIP PRO? I need your help. Please: (

I solved export to csv problem. Polish characters are display if I import csv document in Excel and when I choose UTF8 coding system. When I open with Excel polish characters not display corectly.

=> Unfortunately, it is not possible ! So the maybe you can delete it after you import it into Excel. It is easy
