Go to Events Booking->Configuration, look at Themes tab, you will see a config option called "Show all days of multiple days event in calendar" to Yes and it should solve your issue.
At the moment, it is not possible to do the same thing in the mini calendar. I will try to work on it in the next one or two weeks. There will be some nice improvements to the extension as well.
