Customize default layouts

I am setting up my events, and would like the user to 1) select a category then 2) select an event and register. To do this, I created a "Categories Layout" menu item. When you click on a category, the next page lists the events of that category in the default layout. Can I change this so the events are listed using the table layout?

Yes. It is possible. You just need to edit the category, and set Layout property of that event to Table Layout. After that, the table layout will be used for the category !
