I have noticed 2 things
1) Event Creators have events listed in their events other than just their events
2) Event Creators can edit events that are not theirs.
Any idea how to fix this or is it something I have setup incorrectly?

Hi Brandon
The question here is what user group the event creator belong to? If someone belongs to a user group which has Configure ACL & Options permission in Events Booking allowed, he will be able to managed all events in the system (that has highest permission)
Maybe that's applied to your case ?
