Well it might be a challenge, however, here is my suggestion.

We are based in the EU and provide international wet labs. So some of our participants are joining from outside the EU and need a letter of invitation for visa purposes. So It would be a great feature if it would be possible for us to add a general template for a personalized letter, that is filled with the relevant event and registrant's details and is sent automatically to the registrant when the payment status is set to paid. This should just be an option that the registrant can check when registering.

I would say that this is a special requirement and hard to come with standard package of Events Booking. If this is really needed, I guess you will need to develop a custom plugin to handle this requirement
