Custom fields display when quantity value reached

From the user side, I have a customizable field with quantities.



When a user wants to register, the option is not displayed if the limit is reached.
It should be great to see the option (disabled) when the value reach is limit. (not hidden)

On the administrator side, when viewing a registrant if the limit is reached, I do not see the choice of the user.
Exemple 1: The user Guy have selected intensité but I can not see it ... It's hard for an administrator to not see the values entered by the user...



Exemple 2: Louise have selected Vélo-Prep. I could see it because the limit is not reached...



I understand the need to help the admin to not exceed the quantity limit but I thing it is more important to see values choose by the user... Could we find a way to show all options but telling him which option is full?
