SOLVED: The number of events per page can be set on the Themes tab of the component configuration page.
I see how to change the number of events to display when using the Upcoming Events module, but I'm using the Upcoming Events Table Layout menu item and it seems to always show only five events for the category. I would like to be able to specify how many events to display per page. I suspect this is simply a parameter that is set somewhere. It would be best if this were a parameter that could be set on the menu settings page.
