Best practice to override default text strings was created by Alexander Krasovskiy
Suppose I do not need a new language, but I need to customize (override) the existing en-GB translation strings to customize button text or something else. So I go to Translations and find the string and modify it - and it works. There is a problem however, that I do not know which strings I have customized, because there is no flag to show that the string has been modified. There is also no "reset to default" option. It would be nice if there was a base language and I could derive from it a new language and override just a few strings. Any suggestions?

That feature is not available. In case you don't want to touch the base language file, you can use Joomla language overrides to change language items, see
docs.joomla.org/Help4.x:Languages:_Overrides
