1. EShop allows you to exports data under EShop -> System -> Exports.
2. EShop also has a tool called EShop Import Pro which allows you to import categories / products / variants / images, etc into EShop. You can read more about it here

Quick suggestion:
The category export should include the full category path, or, at least, the parent category. As it stands,when a site has many categories, the category export file is difficult to use and of limited value.
