I have 'Enable Delivery Date' set to 'no' in the Checkout section of Configuration -> Options. Nevertheless, the order confirmation and other notices sent to the purchaser contains the Delivery Date. Before I edit each of the Messages to remove this field, is there a simple on/off switch I am missing?

I don't think so, you have to delete element in single messages

That is what Support told me too. In case you want to use these fields in the future, instead of deleting the element and the surrounding formatting, you can can comment out the section by inserting <!-- (bracket ! hypen hypen) at the start and --> (hypen hypen bracket) at the end.

I am sorry but that is not supported. If you don't want to use it, simply remove it. If you want to use it again, simply add it back.
