customer name in order email

Hi!
I would need to enter the name of the customer in the email order ,
not in the payment section [PAYMENT_ADDRESS] but in a separate field like [CUSTOMER_NAME]

How can do this?

Also, administrator can view all customer orders from front end ?

Yes, this is already supported. You just need to use [CUSTOMER_NAME] tag in the customer email message, then it should work as your expect.
