is it possible to remove the title of the Product Options on the product page.

Sound like this is an outstanding requirement. If you remove title of Product Options, then customer will not know what options to choose. Of course, you can remove it by modify the file components/com_eshop/themes/default/views/product/default.php

in the options tab in the product, is there a way to change the order of options for example

I choose:
Option 2
Option 1

but for some reason in the front end it shows me option 1 first and then option 2.
how do I change the order?

You should go to EShop -> Catalog -> Options to change orders of options from there.
